MUSHROOM TOAST

This makes a nice savory breakfast. I'm mindful not to eat sweets for breakfast so often,  my challenge of course is finding simple but filling foods that aren't your typical break-fast fare.  Mushrooms are one of those good for you foods that we should eat a few times a week.  If you don't want to put it on top of bread you can put it over quinoa or grits.


Wash and cut up mushrooms and bell pepper.

Saute in a dry skillet until it cooks down and concentrates the flavor of the 

mushrooms. You can add a pinch of sea salt and cayenne pepper when done.



Lightly toast bread with a drizzle of virgin olive oil.
I used flat Afghan bread, if you have a favorite
crusty bread that will be fine.  Spread the mushrooms on top
and eat well.
