Easy Granola

This is a basic recipe for granola. You can get creative and add your own favorite seeds, nuts, and spices or make it simple with no nuts.  I usually make it for breakfast but if it last more than two days I’ll find my kids snacking on it.  This is a better and more healthy food over box cereals which are full of sugars and who knows what else.  Below is a video that talks about how cereal is made and why it is not good for you or your child.  A homemade cereal uses low heat and is freshly made rather than years long shelf life. The best part is it is easy and quick to make. Some mornings I’ll mix it up and make it as I get dressed or you can make it he night before.  

Pre-heat oven to 275 degrees


1 cup rolled rye
1 cup rolled oats
handful raw buckwheat
1/4 cup raw sunflower seeds
Handful sesame seeds
1/8 cup grapeseed oil
1/4 cup maple syrup
1 tsp vanilla extract

Optional: 1 tsp bitter Cacoa chips (optional), cinnamon

  1. In large bowl mix rye, oats, sunflower seed, sesame seeds and buckwheat.
2. In small bowl combine oil, maple syrup, vanilla. Pour the liquid mixture over the dry ingredients. Stir until mixed well
 
Spread on a cookie sheet, (use 2 pans or cook 2 batches) and cook for 20 minutes. 

Cool granola completely before storing in a tightly covered jar.
You can mix in raisins and almonds, walnuts, or pecans. 
Top with banana slices and use hemp, coconut, hazlenut or almond milk.

MUSHROOM TOAST

This makes a nice savory breakfast. I'm mindful not to eat sweets for breakfast so often,  my challenge of course is finding simple but filling foods that aren't your typical break-fast fare.  Mushrooms are one of those good for you foods that we should eat a few times a week.  If you don't want to put it on top of bread you can put it over quinoa or grits.


Wash and cut up mushrooms and bell pepper.

Saute in a dry skillet until it cooks down and concentrates the flavor of the 

mushrooms. You can add a pinch of sea salt and cayenne pepper when done.



Lightly toast bread with a drizzle of virgin olive oil.
I used flat Afghan bread, if you have a favorite
crusty bread that will be fine.  Spread the mushrooms on top
and eat well.

GOT SEA MILK?

My kids and I drink it everyday. Here's a simple nutrient packed living food.  Known as Irish Sea Moss which alkalizes the body and in the West Indies it is favored as a healing tonic to keep the male sex organs in good working condition.   It has 92 of the 102 minerals the body needs and as much calcium as milk.  It can be added to drinks, soups, sauces and anything that you want to thicken.  Sea moss is gelatin of the vegetable world.  My easy smoothie is better than milk, it's creamy, filling and great as a breakfast drink, a mid-day snack or a night cap.  Great for kids as a milk replacement.  If you are trying to loss weight, this curbs your hunger because it nourishes the cells.



Boil a pot of sea moss and store in a glass jar in the refrigerator until you are
ready to use.  It will keep for 5 days.

Sea moss cooked and a banana blended makes a creamy drink.
1 cup sea moss
1 med size banana (frozen is good)
vanilla extract to taste
1 tsp honey (optional if prefer sweeter)

Blend the sea moss until creamy, then add other ingredients and blend for 1 minute or until smooth.
